Taco Night! One Meal, Two Ways

An Easy Way to Keep Everyone at the Table HAPPY

This Week’s Meal: Taco Roll-Ups and Taco Stuffed Poblanos

Do you struggle with striking a balance at dinner time with your family? Do you want something different than your kids usually want?

I have found myself in this position time and time again… making two different meals and creating more stress and chaos for myself each night.

So, I have been racking my brain for some simple ideas for making ONE meal, TWO ways! It is about transforming everyday dinners into a win-win for everyone in the family! Join me as we explore creative recipes that strike the perfect balance between kid-approved and adult-friendly meals.

Now, onto the good stuff… this week’s meal: taco roll-ups and taco stuffed poblanos!

This is a simple dish that can be easily prepped ahead of time, and it truly makes everyone happy in my house!

My husband and I love that we get some veggies and a little more flavor and the kids are always up for taco night!

You can add any toppings you want on these peppers! We like to add Greek yogurt, avocado, and tomatoes!

FIVE (Maybe six) INGREDIENTS ARE ALL YOU NEED:

  • Ground Beef (I get our ground beef from Wild Pastures so it already has taco seasoning mixed in!)

  • 1 Packet of Taco Seasoning (this is for those who don’t have the meat already seasoned)

  • Black Beans in Chili Sauce

  • 3-4 Poblano Peppers

  • Red Enchilada Sauce (Siete is our favorite)

Directions:

  1. Set oven to 400.

  2. Start by browning your meat in a skillet for about 5-7 minutes until your meat is cooked through.

  3. Add your packet of taco seasoning here and stir for about 30 seconds until it is all coated.

  4. Add the chili beans and let simmer for about a minute to combine them.

  5. While your beef browns, slice the poblanos in half and pull out the ribs and seeds.

  6. Coat the bottom of your 9X13 baking dish with a layer of enchilada sauce.

  7. Place Poblanos, slice side up, in the pan.

  8. Fill each poblano half with the meat and bean mixture. I like to drizzle a little more enchilada sauce on top.

  9. Top each poblano with the shredded cheese.

  10. Bake poblanos for 10-15 minutes until the cheese is melted and bubbly.

  11. Use the remaining meat mixture to fill tortillas, top with cheese, and roll them up for your kiddos. These are also great thrown into the air fryer for a minute to melt the cheese!

Now get that dinner on the table and enjoy everyone’s company!

A little extra tip and a new development in our household… when I fix a meal like this for our family, this is our only meal. I will not be making any extra mac and cheese, etc. So if the boys do not like the meal, we offer one other option: cereal. I know it is not the most nutritious option, but to keep my sanity in this stage of our family, this is what is working! It also encourages them to try whatever is on their plate because they get sick of having cereal!
